For the following reasons, total daily averages are not a direct sum of the category averages.
Only those costs that fall within a reasonable range of the median are included. (This is around two standard deviations, for those of you that want to get nerdy.) This eliminates some of those crazy outliers that are not typical of what most people spend while traveling. (If you're the guy who spent €2,000 on alcohol in one night, then yes, we're talking about you!)
Some category averages are calculated per item (those marked with a 1 on the charts, while some are calculated per day (categories marked with a 2). Not all categories are included in the total daily average for a variety of reasons, but mainly because not everyone spends money on all categories every day. This is to ensure that the total daily average is realistic for the amount that one would actually spend if visiting a destination.
For example, food is calculated as a daily sum because not all meals are equally priced even though people eat several times each day. On the other hand, entertainment items are averaged on a per-item basis, as sometimes only one activity might be purchased in a day (such as a museum ticket), while on other days there might be several purchases or none at all.
